Hot Cocoa Waffles


Oh.My.Goodness. These were so delicious! I wish I’d made a full batch to have leftovers that I’d be devouring right now. Really. They were that good.

1 1/2 cups all-purpose flour                              1 egg

1 teaspoon baking powder                               1/4 cup oil of choice

1 tablespoon brown sugar                                 1 1/2 cups buttermilk

1 teaspoon cinnamon                                       1/2 teaspoon vanilla extract

1/3 cup cocoa powder                                     Mix-ins of choice; mini-marshmallows, mini chocolate chips

1/4 teaspoon salt

Preheat waffle iron and spray with baking spray. In a large mixing bowl, whisk together all the dry ingredients.  Add the egg, oil and buttermilk. Whisk together.  I pulled out one plain for my child who doesn’t like chocolate chips, then added chocolate chips and mini-marshmallows to the remaining batter. Cook according to instruction manual, mine’s 90 seconds on each side. This makes about 3 Belgian waffles. You don’t even need butter or syrup. A cup of hot cocoa is a welcome addition on a cold February morning.
