I almost hesitate to share this recipe. I certainly hesitate to even call it a recipe, but here goes:
Cowboy Hot Pot
1 large can of vegetarian baked beans
1 can or 2 cups frozen mixed vegetables, cooked with 1 Tablespoon Barbecue Seasoning
1 box of au gratin or scalloped potatoes.
Layer ingredients in sprayed casserole dish in the order given. You’ll probably want your potatoes a little drier than if you were just eating the potatoes by themselves, like a cup and a half of water instead of two cups. Bake for 20 minutes at 350 degrees, or whatever your box suggests. Serve with a crunchy green salad.
I do realize this is not the healthiest thing we could be eating, but it is a Lenten tradition in our house. As Fridays are also family movie night in our house, we stuck to the cowboy theme and watched An American Tail: Fievel Goes West.
